for everyone
It was a gloomy morning when I woke up last Sunday, I didn't feel like wake up so early in the morning but my 2 years-old daughter wanted me to play with her. Right ... kids, they always have energy unlike adults (like me, for instance).

Went to the kitchen to find something to eat but I guess I forgot to buy supplies for my own breakfast things. There's only a package of pancake in the pantry, euwww.... not in the mood for pancake but oh well I have to eat.

Here's my kind of pancake that I made for breakfast
- 1/2 cup pancake mix
- 1/2 cup water
- 1/2 tsp cinnamon
- 1 tbs light brown sugar
- 1 tbs low-fat ricotta
- strawberries and peaches ; for topping

Directions :
- Mix pancake mix, water, cinnamon, brown sugar, ricotta, stir with wire whisk until large lumps disappear
- Pour less than 1/4 cup to lightly greased skillet
- Turn when pancakes bubble and bottoms are golden
- Top with chopped strawberries and peaches
